Spanish style liver with fries

This week's recipe will show you a great Spanish way of cooking liver with fries/chips. For 4 people we'll need:
  • 1 Lamb liver or aprox. 3/4 of  one pork liver
  • 1 Italian green pepper
  • 2 ripe tomatoes
  • Ground pepper
  • 1 Bay leaf
  • 1 Clove
  • 2 or 3 garlic cloves
  • 1 Dried red pepper (optional)
  • Saffron powder (or food coloring)
  • Water
  • Cooking oil
  • Salt
  • Potatoes

Rabbit in tomato sauce

Rabbit is one of the most common wild foods in Spain, and this recipe will show you one of the tastiest ways to cook it Almería style. This recipe is really simple and the result is just amazing.

The necessary ingredients for 4 people approximately would be:
  • 1 rabbit in pieces (around 1.200 gr - 42oz)
  • 1,5 kg -53 oz plum tomatoes
  • 2 Italian green peppers
  • Olive oil
  • Salt

Homemade cheesecake

For our first sweet recipe we brought you an incredibly easy one that can be cooked with some very common ingredients:

  • 5 eggs
  • 375 ml of condensed milk
  • 300 gr. (11 oz) of cream cheese

Pickled sardines

Today we brought you one of Grandma Rosa's special recipes, pickled sardines a recipe as delicious as easy to prepare. Grandma Rosa's recommend cooking it at least one day before eating it, so the sardines will absorb all the flavour.

For around 1/2 kilo (17 oz) of sardines we use:
  • Salt
  • Flour
  • Olive oil
  • Bay leaf
  • Saffron
  • Ground pepper
  • 3 garlic cloves
  • 1 clove
  • Cumin
  • Vinegar
  • Water

Chicken Paella

Today we brought you a new paella recipe, this time with chicken. As always, an easy cooking recipe that needs common ingredients.

To cook a paella for 4-6 people you will need:
  • 1/2 chicken (sliced)
  • 1 onion (medium size)
  • 4 tomatoes
  • 2 artichokes
  • 2 or 3 garlic cloves
  • 1 green pepper
  • 100gr (3,5oz) peas
  • 6 handfuls of rice
  • Some parsley
  • 1/2 cup of white wine
  • 1 litre water
  • 1 bay leaf
  • Some ground pepper
  • Some cumin
  • A little bit of saffron powder
  • Olive oil
  • Salt
  • 2 stock cubes

Pork cheeks

Today's recipe is not a common one but it is really easy to prepare. For a big platter we need:
  • 1 and a half kilos (2.2 pounds) of pork cheeks
  • 3 big onions
  • 2 or 3 garlic cloves
  • Pepper grains
  • 1 bay leaf
  • 1/2 cup of cognac or one glass of white wine
  • 1/2 glass of water
  • Olive oil
  • Salt

Octopus paella


This week we bring you a typical Spanish recipe with the special touch of Grandma Rosa.

To prepare octopus paella for 5 people we will need:
  • 1 Kg (40 oz) of octopus.
  • Half onion.
  • 2 green peppers.
  • 150 g (5 oz) of small 'Lima beans'.
  • 3 tomatoes.
  • Rice for 5 people.
  • Peas (optional).
  • Artichokes.
  • 1 red pepper.
  • 1 bay leaf.
  • A pinch of salt.
  • Prawns to taste.
  • A pinch of cumin.
  • Ground pepper.
  • 3 garlic cloves.
  • Some parsley.

Codfish fritters


Another great Easter dish (and easy to prepare) in Almería are the Codfish fritters more known here as  'tortos de bacalao'. For around 25 fritters you will need:
  • 1/2 Kilo (2,2 pounds) salted Codfish.
  • 4 or 5 green garlic stems.
  • 1 bunch of parley.
  • 1 big glass of soda.
  • Baking powder.
  • Baking soda.
  • 300gr (10 oz) of flour.

Octopus stew


This Easter we brought you this Spanish seasonal recipe. This recipe needs a bunch of ingredients, but it's really easy to cook. Hope you enjoy it during this holidays.

The necessary ingredients to prepare this recipe for all the family are:
  • 3 raw octopus legs (sliced)
  • 200gr (7oz) chickpeas
  • 200gr (7oz) dried beans
  • 100gr green peas
  • 1 tomato
  • 1 onion
  • 1 lettuce heart
  • 3 green chard bunches
  • 1 or 2 potatoes
  • Ground pepper
  • 1 cclove
  • 1 bay leaf
  • 1 head of garlic
  • Olive oil
  • 1 litre water
  • Salt or stock cube
